Rub One Out With Steve Albini

Wait.  That headline is a little misleading.  I’m talking about the rave Steve gives to a new meat rub (STOP IT!), a collection of spices designed to make your next meal sing.  Or at least growl pleasantly.

Steve has a rep as quite a food blogger.  And yes, this is the same Steve Albini that recorded Nirvana’s In Utero and once fronted Rapeman and Big Black.

From Bon Appetit magazine (no, I’m not kidding.)

How the combination heightens flavor is remarkable,” Albini says of his friend’s invention. “What’s amazing is how all the different elements don’t overlap. The coffee is bitter and smoky, while the black pepper is floral and hot; garlic powder adds a sulfurous, vegetal quality, and the sumac is sour, with a mineral overtone reminiscent of saffron.
